Lamb ribs need to be lightly seasoned with Bootleg Dry Rub on both sides. Place the ribs, meat side up in an area that reaches between 280º- 300º degrees, on your grill or smoker, but is not directly over coals. After 30 minutes, turn ribs and cook for another 20-40 minutes, timing is everything for this delicate meal; you will need to check for "doneness" to match your taste preference, and you may want to lightly sear the ribs for presentation, be sure to record your time, temperatures and other conditions that can effect your outcomes. Special care with these ribs will be worth your effort; it is definitely on the "practice makes perfect" list. |
